Each harvest goes straight from grove to mill — olives are pressed within a single day to lock in rich aroma and nutrients before oxidation begins.

Using a two-phase cold milling process below 27°C (80°F), the oil retains natural polyphenols and signature peppery character.
Stored to Preserve Freshness
The finished oil rests in stainless steel silos under nitrogen at 14°C, keeping oxygen and light away so every bottle tastes as fresh as the day it was pressed.
